Carotenoids are a group of molecules that give fruits and vegetables their orange, yellow, and red colors. The most famous carotenoids include beta-carotene, which is found in carrots and pumpkin, and lycopene, found in tomatoes and watermelon. Carotenoids accumulate in the skin and may act as antioxidants to support your skin's defense against sun damage. One study found that taking beta-carotene may be associated with reduced appearance of wrinkles and a more healthy response to UV light. Another set of studies has found that consuming beta-carotene may be associated with reduced risk of sunburn.
