The Science
Cellulase was not in the human starter pack.
Here's something wild: Your body can't break down cellulose — the tough fiber that makes up plant cell walls — because humans don't produce the enzyme that does it. And neither do cows, technically — their gut bacteria make cellulase for them, housed in an extra stomach chamber built for exactly that job. Humans never evolved that setup.
So what happens?
Since we don't produce cellulase, cellulose passes through the stomach and small intestine mostly intact. It reaches your colon, where gut bacteria ferment it — producing gas as a byproduct. The undigested fiber also adds bulk to stool and feeds beneficial bacteria, which is part of why fiber is good for you in the first place.
That's exactly why Break It Down includes cellulase and hemicellulase alongside the more familiar enzymes — to help break down some of that tough plant fiber earlier, before it reaches your colon and gets fermented into gas.
