Divide the dough amongst the donut pan.
Bake for 15-20 minutes or until lightly golden.
Remove from the oven and let cool.
To prepare the cashew caramel filling, combine all ingredients and whisk until completely smooth.
Evenly distribute amongst the donuts, covering the cookie base.
Place in the freezer until set.
Melt the chocolate and coconut oil together until smooth. Remove the donuts from the oven and divide the chocolate amongst them, covering the caramel layer.
