Fudgy Sweet Potato Protein Brownies

Ingredients

  • 1 cup mashed sweet potato
  • 1 cup smooth natural peanut butter
  • 2 flax eggs (2 tbsp ground flax + 6 tbsp water)
  • 2/3 cup maple syrup
  • 2 tsp vanilla
  • 1/3 cup Ora chocolate So Lean & So Clean protein powder
  • 1/3 cup cocoa powder
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt

Directions

  1. Preheat oven to 350°F.
  2. In a bowl, whisk together mashed sweet potato, peanut butter, flax eggs, vanilla, and maple syrup.
  3. Add protein powder, cocoa powder, baking soda, and salt. Fold with a spatula until combined.
  4. Pour into a greased 8x8 baking tray and bake for 30–35 minutes.
